Picnic Day + Recipes

This past weekend was gorgeous here in Provo. It’s been warming up and everything is blooming outside. I woke up on Saturday to a picnic packed + ready to go and dinner already in the crockpot.  I love my hunk.

We went to a local park and it rained like 10 minutes after we got there even though the sky was sunny + blue right next to the small black storm cloud over us. Literally. But, it passed over us and the sun came back out in less than 10 minutes.

It was too gorgeous to not take pictures.

We ate chicken salad sandwiches with fruit salad + watermelon & carrots. So perfect. I decided to share our recipes for our chicken salad + fruit salad are below. My husband, Nick, is an amazing cook and creates all of his own recipes. You can count on almost every recipe on this blog being made and created by him.

This is the very first edition of “Good Eats With Nick” where my hunky husband will share some of his delicious recipes. We’re starting off with two super simple recipes that even I can’t mess up.

Nick served a mission for 2 years in Brazil and he loves adding Brazilian twists to whatever he’s cooking. The first recipe we have for you today is Brazilian Twist Fruit Salad. It is soo yummy!

Brazilian Twist Fruit Salad

Ingredients

Instructions
  1. Cut apple + orange + banana into small cubes.
  2. Combine everything in a bowl and mix lightly to coat fruit with liquids.
  3. Refrigerate until serving.

Ingredients

Instructions
  1. Put frozen chicken breast in medium saucepan. Cover with water. Boil for approximately 25 minutes, or until chicken is white throughout and shreds easily. (If using thawed chicken breast, boil for approx. 15 minutes). Remove cooked chicken from pot and shred.
  2. Remove apple core. Cut into thin slices and then cut slices into small squares/rectangles.
  3. Mix apple slices + shredded chicken + all other ingredients in a large bowl.

    Oh man, it looks gorgeous outside! And that Brazilian fruit salad sounds divine! I’ll have to try it!! I worked at Tucanos in college, so I am all about the Brazilian twist!
